There is a casserole in the oven made with yellow squash(CSA), quinoa (local source) , havarti cheese (bought at the F.M.), bacon fat, half & half, cream cheese, salt, pepper, onion powder, garlic powder, shallots and a little bit of dried red onions (most of these items came from Wal-Mart and Meijer)

I used this as a general guideline but I did not measure anything I just put it all together and hoped for the best.
I am using Pioneer Woman's recipe for grilled zucchini with yummy lemon salt but I only had one lemon so I used that plus two limes.

I made some pesto with basil from Berea College Farm Store.

I also bought steak there so we may have that with some green beans (CSA) and potatoes (Farmers Market)
I bought some local maple syrup that is to DIE FOR $12 for half pint from Sunny Wolf Farm and it is worth every penny! Supplies are limited so I hope to by one half pint each week until they run out. YUM! YUM!
I also hope to make some banana blueberry bread

and chilled zucchini mint soup from the Bon Appetit cook book I brought home from the library
I am planning to make some apple/carrot juice to drink. I always feel better when I juice.
I have also been shopping at Happy Meadows, our local health food store. There have been some great sales on organic lemonades and veggie broths. I also needed to pick up some spices and other items for my weekly menu.
I forgot to mention that I have not been feeling well off and on for the last several weeks. I ate some sausage and the spices just tore through my stomach. I felt like I ate razor blades. It was awful. I have had some other stuff going on but I wont bore you with the details. I haven't had coffee for a few days now, I switched to tea so I am consuming a lot less sugar with my morning caffeine.
So I have spent about $50 at Happy Meadows over the last few days.
This week at the farmers market I spent $20
I was given a certificate for $10 market bucks which could only be used for produce of food producing plants. I spent that on potatoes and tomatoes.
I spent about $28 at Berea College this week for two steaks and a large bag of basil.
Two weeks ago I spent about $70 since the meat was all on sale I decided to get a little extra.
I think that as time goes on more and more of my food is from local stores, my CSA, farmers market and the Berea College Farm Store. Will I be able to feed all 5 of us for a week from just these sources? I don't know. My daughter was talking to me about it and she said "Mom, what will we do for lunch?" This was something I had not yet figured out. We are so used to eating sandwiches, chicken strips or nuggets, frozen fish, pizza rolls and grilled cheese and tomato soup. (the last one would be a lot easier to replace with local food).
I am still trying to figure it out. For over a week I have had all this food just sitting there waiting to be used. It is really hard to get up and cook when I am so tired. Today is my day off so I spend most of the day cooking. I really love it. I just need the energy to keep up with all of this!!!!!
